The ones that go unnoticed are those bowls of nuts from the supermarket, the bland jarred olives, and the tasteless breadsticks. You put them out, people nibble on them without enthusiasm, and nobody ever mentions them again.

The ones that are remembered are something else entirely. They have a product behind them. They have discernment. And they have that moment when someone stops, looks at what they're holding, and asks, "Hey, what's this?"

That's what a good gourmet appetizer aims for . Not to impress. To create that moment.

We've been selecting products at the Mercado de la Paz for over fifty years. I've put together appetizers for tables of two and for events of 150 people at weddings, and I can tell you that the difference between an appetizer that works and one that doesn't is almost never about the budget. It's about knowing what to put on the table.

What makes an appetizer truly gourmet?

The word gourmet is used a lot. Too much, sometimes.

A gourmet appetizer is one made with honest, well-selected products that have a story behind them and taste like they're supposed to.

Three criteria that I always apply:

Traceable origin. Knowing where what you put in comes from. Not just "Iberian" in general: from which pasture, from which producer, from which designation of origin.

Real preparation. There are products that are made well and products that are made quickly. They are not the same. Time and technique are evident on the plate.

Balance on the table. A good appetizer isn't an accumulation of expensive products. It's a coherent selection: something cured, something fresh, something with contrast, something surprising.

Iberian acorn-fed ham: the anchor of any serious appetizer

If there is one product that cannot be substituted in a Spanish gourmet appetizer, it is hand-carved acorn-fed Iberian ham.

Not pre-sliced ​​from a tray. Sliced ​​to order, with the piece right in front of you, with the marbling of infiltrated fat glistening before it even reaches your mouth.

The difference is hard to explain in words. You only notice it when you try it.

I remember a customer who came into the shop one day looking skeptical. We offered her the 100% Iberian acorn-fed ham from Cumbres Mayores, from the Castaño family. She tried it right there at the counter. She didn't seem entirely convinced. I showed her other options, but she chose that one.

A week later she wrote to us via the website's WhatsApp to order it for her wedding.

We prepare it in large pastry trays, well vacuum-sealed, and send it refrigerated to Paris.

Since then, he repeats it from time to time. What began with a moment of doubt turned into a story we still tell. Because that's what a good product does: it convinces without you having to convince them.

Our own creations: things you won't find anywhere else

In May 2019 we opened our own artisan workshop. We hold an artisan production license, one of only three active in all of Spain.

What comes out of there can't be bought anywhere else. It's not marketing: it's literal.

Homemade products are, in my opinion, the most difficult gourmet snacks to match. Because behind them lies real work, real time, and a way of doing things that almost no one maintains anymore.

  • Artisan pastrami. Cured in spices, smoked, thinly sliced. It has its own unique character. It tastes like nothing you've ever tasted before.
  • Roast beef. Cooked at a low temperature. Tender, pink, with just the right amount of salt.

  • Slow-roasted turkey breast. For those who want something lighter without sacrificing flavor.
  • Artisan Iberian shoulder knuckle. Different. The kind that surprises when people least expect it.

Good smoked wild salmon is a top-notch gourmet appetizer. It has a texture and flavor that farmed salmon simply can't match.

The same goes for a good cured tuna mojama, some cod roe, or quality smoked cod. These are products that call for bread with tomato, a drizzle of extra virgin olive oil, and time to savor them.

There's a whole world of Spanish artisanal preserves that many people haven't explored. And when they discover it, they never go back.

Pickled mussels from the Galician Rías. Cockles in brine. Razor clams. Cantabrian anchovies. Tuna belly. Each with its own character, each with its own way of being eaten.

With a glass of chilled white wine or a perfectly poured beer, they can put together a luxurious appetizer with very little effort.

Artisan cheese board: the most underrated section

A well-constructed cheese board is not simply putting several cheeses together on a wooden board.

It has an order. A logic. You start with the mildest and freshest, move on to the more mature, full-bodied cheeses, and if there's a blue cheese, you save it for last. The accompaniments matter: quince paste, honey, walnuts, raisin bread, or walnut bread.

A platter like this, beautifully arranged, can be the centerpiece of your aperitif. And it leaves a far better impression than any elaborate dish you've spent hours preparing.

Foie gras, pâtés and caviar: for when the appetizer is the star

Sometimes the appetizer isn't the prelude. It's the main course.

An intimate celebration, a company dinner, an event where you want the table to speak for itself. This is where foie gras comes in—duck, goose, with different nuances—artisanal pâtés, and, for those who want to go a step further, caviar.

Cold and hot starters: how to structure a complete appetizer

When the appetizer is for a celebration or an event, it is advisable to think in two courses.

Gourmet cold starters — the ones you set up on the table and are there from the beginning:

  • Board of hand-carved Iberian ham
  • Board of artisan cheeses with accompaniments
  • Premium preserves served in their own container or on a spoon
  • Smoked meats with toast and butter
  • Homemade cold dishes: pastrami, roast beef, mojama

Gourmet hot starters — those that come out of the kitchen and have their moment:

The key is not to overwhelm. A well-presented gourmet appetizer spread has between four and six items . Each with its own space, each with its own prominence. If you put out fifteen things, people won't know where to look and none of them will be remembered.

And one thing you learn over the years: knowing who's going to eat is more fun than any list of ingredients. Because when you know people's tastes, you don't just get it right: you surprise them.

A familiar product—like gorgonzola or foie gras—can leave someone speechless if presented beautifully. I find it very effective to pair blue cheese or foie gras with red berries or an unexpected topping. And at home, when the opportunity arises, I get out my blowtorch and caramelize the foie gras or gorgonzola with brown sugar. It's easy, it looks spectacular, and I swear people can't stop talking about it. That kind of attention to detail is what transforms an appetizer into a memorable experience.
